Light Banana Bread

Short, sweet, and to the point!  Tasty...even my toddler loved it!

Light Banana Bread


1 1/2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp baking powder
1/4 tsp apple pie spice
2 egg whites
1 cup sugar
1 cup mashed ripe banana (about 4 small)
1/4 cup vegetable oil
1/4 cup craisins

Preheat the oven to 350°F.


Stir the first 5 ingredients together.  In a mixing bowl, beat the egg whites, sugar and banana until well mixed.  Add the oil and mix well.  Stir flour into the banana mixture.  Gently fold in the craisins.

Spray an 8x4x2 inch loaf pan with non-stick spray.  Pour in the batter.  Bake for 55 to 60 minutes or until a wooden toothpick near the center comes out clean.  Cool in pan for 10 minutes.
